Executive Chef Claudio Portuense has demonstrated his passion and culinary talent from the moment he joined the Ethan Allen Hotel as a sous chef in 1998. After training at the Culinary Institute of America in Hyde Park, NY, he now oversees the operations at Fairfields Restaurant, Fairfields Lounge, as well as the Conference Center and Grand Ballroom at the Ethan Allen Hotel.
